I don’t know about you, but I find that there is something comforting about noodles. Maybe it stems from childhood when my mom would make chicken noodle soup when I was sick, or the fact that she would intentionally make her famous “$500 Rigatoni” a staple in our home (knowing that it was one of my absolute favorite recipes ***prior to becoming a vegetarian of course!) Either way, noodles = comfort food.
The unfortunate thing about traditional comfort food is that it tends to be associated with unhealthy choices: saturated with sugar, swimming in salt, smothered in sinful sauces, oozing with oil, bathed in butter, glistening with grease, chock-full of cheese, or crammed with caboodles of calories. With this dilemma in mind, I whipped up a delicious, nutritious spaghetti squash boat for dinner this weekend. |
