I don’t know about you, but I find that there is something comforting about noodles. Maybe it stems from childhood when my mom would make chicken noodle soup when I was sick, or the fact that she would intentionally make her famous “$500 Rigatoni” a staple in our home (knowing that it was one of my absolute favorite recipes ***prior to becoming a vegetarian of course!) Either way, noodles = comfort food.
The unfortunate thing about traditional comfort food is that it tends to be associated with unhealthy choices: saturated with sugar, swimming in salt, smothered in sinful sauces, oozing with oil, bathed in butter, glistening with grease, chock-full of cheese, or crammed with caboodles of calories. With this dilemma in mind, I whipped up a delicious, nutritious spaghetti squash boat for dinner this weekend. |

How to Bake Spaghetti Squash
***I chose to make an Italian inspired sauce out of some produce that I bought earlier in the week. I chopped up fresh tomatoes, spinach, vidalia onions, baby portobello mushrooms and let them simmer while the squash was baking (stirring occasionally). Once the "boat" was ready, I put the sauce on top, added a dash of crushed red pepper, and ate!

The good news is that there are plenty of ways to enjoy “noodles” on a regular basis without feeling (or looking) like Jabba the Hutt. With that being said, I have compiled some of my favorite recipes for healthful “noodle” recipes from a few incredibly inspirational chefs!
